About the Wine

Daschbosch Méthode Ancestrale 2025 is crafted from Verdelho in Breedekloof by winemaker WS Visagie, as part of Daschbosch’s small-batch experimental range that explores ancestral sparkling techniques and minimal intervention. Grapes are hand-picked, gently destemmed and cold soaked before a slow wild-yeast fermentation starts in tank and finishes in bottle, where the wine rests several months on lees for extra texture.

The wine shows a pale straw colour, with vivid aromas of lime, crisp green apple, freshly baked pastry and subtle toasted almond. On the palate it is bright and zippy, delivering vibrant citrus and orchard-fruit flavours wrapped in a soft, creamy mousse. Naturally high acidity keeps the style bone-dry and refreshing, with a lingering, lightly biscuity finish.

Serve well chilled as an aperitif, or pair with smoked salmon, oysters and mixed seafood platters. It also complements sushi, lightly battered calamari and simple grilled white fish, where the wine’s lively acidity and fine bubbles cut through salt and richness.
