Stony Brook Ghost Gum Red 2019

Ghost Gum 2019

About The Wine

This single vineyard Cabernet Sauvignon was pruned to produce extremely small volumes of exceptionally concentrated grapes. The bunches were harvested by hand at full ripeness, fermented in stainless steel and transferred into new French oak barriques for a total of 32 months. There is a classic, lead pencil, cigar-box aroma that is immediately evident on the nose, followed by ripe, dark cherry and blackberry fruit. The rich oak component follows from the nose to the palate, where there is a lovely balance between acidity and firm tannins. The finish is long, clean and savoury, asking to be paired with a succulent meat dish. The wine has great potential to be cellered and should continue to impress well beyond 2030.

Ratings

John Platter Wine Guide 4.5 Stars: 100% Cabernet, fruit rigorously sorted to create beautifully structured and intense wine, inky hued, lipsmackingly dried. Still veiled by oak but already generous, persistent. Will reward further cellering.
