About The Wine
This is a sparkling wine made in the traditional Méthode Cap Classique (“MCC”), consisting only Chardonnay grapes. The wine was matured in the bottle on the lees for 50 months before disgorgement. Some 15% of the base wine was matured in French oak barriques, with reserve wine dating back to 2005. Only the cuvée fraction of pressed juice was used to ensure the purest and most elegant bottled product.
Fresh lemon and lime are immediately apparent on the nose, with a hint of brioche from the extended lees contact. Lovely balance between brightness and richness on the palate, followed by a long, dry finish, allowing this Cap Classique to be cellared for many years to come. A wonderful wine to accompany oysters or to be enjoyed on its own for that special celebration.
