This atypical vinification in an amphora (the aim being to "round" the wine without giving it a woody side), highlights the complexity of the wine and the finesse of the minerality while giving the start of the palate a patina. It can be savoured from its youth (2 to 3 years) on a beautiful cheese platter, it goes well with goat cheese, Beaufort, Comté. Its elegance goes wonderfully with dishes in cream sauce or based on mushrooms.
